What does it mean to a Christmas tree to give it a fresh cut before putting it in water?

Well, an evergreen tree is much like a fresh cut flower in that it will continue to take up water once it’s recut and warmed up inside.  Make sure you put your tree in water within 40 minutes of that fresh cut or you will risk sap clogging the pores at the end.  A tree that is saturated with water will last longer and lose fewer needles during it’s indoor career as your holiday tree.
